Default Hot Food Competition

I have been "picked" to do the hot food competition in Atlanta using the ACF Hot Food Rules.

I am a little nervous as I havent competed for 5 years.

Any tips and/or advice?

Do as many run-throughs as humanly possible. Planning how you will set up your station, when you are gonna cook what will save you butt in a competition. Remember, winners aren't lucky, they are prepared.

ditto madchef's advice.
duct tape is a powerful tool.....seriously, I've seen top competitors tape on wet wipe towels on the end of the stainless table....
Their whole dbls competition was so coreographed, down to the wiping down their area. Aiden Murphy CMC is a joy to watch compete.
