Default fresh cream and creme fraiche

ok so at work today one of the duty managers walks out through the kitchen with the creme fraiche.. i ask her what thats for, she says its because they have run out of fresh cream

so im like WTF? creme fraiche instead of fresh cream!? who told you that are you sure your not mistaken?

i was cut off mid sentence, as this duty manager is the partner of the head chef "martin knows what hes on about!!" in a very condesending way and she walks off

and im left there wondering wether to try and convince her that shes completely wrong (now i think about it, i could have won the argument easily... "what if they are allergic to cheese?")

what am i supposed to do when the wait staff (or in this case duty manager) takes it upon themself (commendably i might add... lateral thinking and all) but makes a bad desicion...

im not in a position to over rule them as deserts are handled by the FOH staff, and the duty manager out ranks me if you will... gah! i wish it had been my mom getting the desert... she would have sent it back and demanded to know why there was cheese anywhere near her desert when there is nothing about creme fraiche on the menu... shes very... um... finickety about that

Maybe she thought it was cream fresh.

Although creme fraiche isn't the same thing as fresh whipped cream I personally find it provides an acceptable tangy garnish for a dessert (either usually for very rich chocolatey ones or for already sour ones). Unlike cheese, creme fraiche doesn't use rennets or anything like that so it should be relatively safe.
