Default Help Please - Gourmet Products

Hello:

We are farmers that are currently raising Berkshire (Kurobuta) pork.

I am hoping to do some informal market research with all of you. We are thinking about selling our pork direct to gourmet restaurants along with other specialty meats such as Wagyu ("Kobe") and angus beef, cornish hens, muscovy ducks, etc.

My questions are...
1- Do you have a hard time finding gourmet meat products?
2- Is there anything in your area that you are having a hard time finding? i.e. ducks, pheasants, etc.
3- Any suggestions on breeds to raise? other than Wagyu beef and Berkshire pork is there a difference?
4- Any other advice/suggestions?
