Smile Looking for some tips about red seal

Hi Everyone:

My name is Brie Menchetti, and I am the girlfriend of an aspiring chef. He has been looking at taking the red seal certificate thing, but we are lost at how to go about it. He currently has a job where he works under and executive chef, it's my understanding that you have to do 6000 hours under the supervision of an executive chef. He's spoken to the chef and he said he has no problem signing off on his hours.....and this is where my questions come in to play.....where do they sign off on these hours? Does my boyfriend need to be registered for something through red seal? are there sign off sheets or something? He is currently enrolled at Algonquin College in the culinary skills program.
