Default stages and apprenticeships?

I'm looking for advice on apprenticeships and stages. Anybody around here do a stage anywhere? How do you find a stage? Who do you talk to? I feel like I've been a cook long enough and now I want to be more involved in cuisine, you know? Making food that represent cultures and ideas and philosophies and that ****. I feel the need to reach out into world and find something worth bringing back -- something I can plant myself in, put forward as my own somewhere down the line, you know? Like goin' out, falling in love, coming home and making a baby, you know? But making that baby out of food.

well that all starts with your interests, if u can find a good chef that will work with you that loves the same type of food as u do then go for i, know a few people that went to france and italy and they came back wit a huge amount of knowledge.
