Default Autumnal colours and flavours!

What's your favourite autumnal dish? Today we cooked fillet of beef sous vide with pumpkin puree, spinach and fondant potato. The plate really seemed and looked seasonal; lovely! See the link below for a photo.

tonight we served Roulade of Chicken filled with Marscapone Cheese, Dates and Roasted Pastachio's with a Hard Cider Brie Sauce, Butternut SquashSpetzel and Three Color Baby Carrots. I thought this was a really nice fall dish, flavors worked really well ......just got done about an hour ago we served 300, which is pretty good for us and I must say we ROCKED THE HOUSE.....one of my best parties in a while. I had everyone working up to thier potential as we only had 5 total in the kitchen and no dishwasher

Sounds lovely, do you have a camera hanging around the kitchen? It'd be nice to see the Oswego Lake cuisine! Up to Hanko's after the busy service?

Fall may be my favorite season. Last night we did a buttercup squash risotto that would make my favorites list. I have a ten gallon crock at home fermenting away with fresh sauerkraut. Hard cider brats with kraut would be high on my favorites list. Apple orchards are in full swing here with big crowds on the weekends. Today is supposed to be sunny so we may have to do some cider and apple doughnut sampling.

Butternut Squash soup... I know it's simple but it's my favourite fall dish.

Here's another one of my fall fav's.....Autumn Chicken, Pan-seared chicken Breast sauteed with Chanterelle Mushrooms, Granny Smith Apples and Roasted Shallots.....I like to finish it with a little Reisling Wine and Butter. Simple and really fits the fall theme
