Culinary Experience: Just Graduated From Culinary School

Culinary Interships?

I graduated Cordon Bleu in 2008, its been over a year since I've cooked professionaly. I did extern at Disney Land in 3 different resorts over 6 months. Can I still apply for Internships this long after i graduated? I didn't want to put this thread under recently graduated since its been over a year and I thought professional chefs might have more information than students.
