Post Flavor Compounds

I've got "Hero" compounds from Swiss Chalet.
Says on the label--- Keep cool and in a dark place. Can I put them in the fridge, or does that mean strictly in a cupboard? What do you all recommend, when storing your flavor compounds? And what is the shelf life on these?
Also,nut pastes, i.e. hazelnut paste?

I keep all nuts products in the freezer. Otherwise they can get rancid.


Sorry I never heard of hero compounds before. What is it?


P.S. Swiss Chalet here is a bbq chicken restaurant chain.

hero compounds are like any flavor pastes ie: Paris Gourmet, Dreidopple, etc.
Keep the compounds in the cubboard, and the nut paste ( if not used within the month) in the freezer.
enjoy the variety!

I've always found Hero brand Compounds to be a very good product if that helps. Good flavor, consistency and keeping. Nice orange and raspberry too.

Maryeo It is the same. I use all hero 1 Once p.c portions of all there preserves on my coffee and refreshment breaks as well as in my main restaurant for breakfast service. I use there raspberry bakers jam with out pips 27# unit for some of our Danish fillings as well as Linzors etc.. That I purchase from Walker butter and eggs In Penn. The compounds I purchase from Otto Brem in new York. Very good products, the P.Cs are nice in little glass units. Like most of these products they are not cheap. But go a long way

I do like the Hero products - like you said, a little goes a long way.

This is going to sound weird, but I used to do some marathon shopping when my daughter lived in New Hampshire - no sales tax (the state motto is "Live Free or Die [Trying]").

Anyway, there are some stores up in that area called "Home Goods," and I've been able to pick up Hero products and other excellent quality preserves in there very inexpensively (like $2 a jar). Home Goods is owned by TJ Maxx who also owns Marshall's. These are all unexpected places to find good deals on products like these, along with a not-too bad selection of cookbooks (got my Chocolate Bible there for $18), a variety of cookware and other items.

A Home Goods just recently opened in MD, so they may be expanding - check them out (or TJ Maxx or Marshall's). It may or may not be worth the trip since their stock rotates pretty quickly.
