Chef asked me to come up with a bite sized dessert in September for 800 people, any ideas that won't keep me busy for a week straight?
I already am doing 800 chocolates so I need something seasonal with the wow factor, we are an upscale french type restaurant.
I was thinking along the lines of a honey roasted pear beinget with summer jam filling or a mini sweet corn springroll with sweet chile sauce. I hate both of my ideas. I have to submit the item by Thursday AM.
How about a honey almond financier with the pear, rich with almond and no fry time!
For September, you could get into the autumnal flavors- quince, figs, spice, apples.
Polenta Cake with fruits.
Individual tart tartan,
French upscale, you could go very classical.
Whatever you decide, your going to really enjoy it!
