Default lollipops

anyone have any experience making a large batch of lollipops? I'm making 500 for an event and I'm wondering how big a batch 2 people can handle at once before it hardens; how long it needs to stay in the mold, etc, so I can figure out how many molds to buy.

You would be better off making a pop type of lollipop meaning you should form your sugar into ropes after pulling it cut it into nuggets then insert a stick and then flatten it slightly. With 2 people working on them you should be able to crank them out. I would think using a mold would have an effect of the sugar because you would be waiting for your sugar to cool between rounds and the sugar would eventuallybegin to crystallize at temperature no matter how carefully you prepare the sugar.

To make it interesting you could also twist 2 or 3 colors together and then twist each pop off, you would get a psychedelic effect which I would suppose you would want with something like absinthe. The look would be similar to the swirly peppermints you see at the holidays.
