Looking for an informational with a NYC Metro based pastry chef

Hello,

I'm researching opening what is effectively a pastry school for kids in the NYC Metro area and would like to have the chance to talk to a pastry chef to better understand the financial constraints of such a project. This is for the NYU Business Plan competition which has as grand prize of $75K.
