Try these. The recipe came from a home cooking message board where I've found lots of wonderful recipes. They're pretty soft, but may not be what you're looking for. It's not necessary to use a bread machine.

Burger/Sandwich Buns

1 cup water
2 Tablespoons butter or margarine
1 egg
3-1/4 cups all-purpose, unbleached flour
1/4 cup sugar
1 teaspoon salt
1 Tablespoon instant yeast

Place all ingredients in your bread machine. Select ‘dough’ cycle. Allow cycle to run.

Dump out onto lightly floured surface. Divide into 8 pieces. Slap each piece into a bun shape. Usually 4 or 5 slaps will do it. Place on greased cookie sheets (or bun pans), cover; let rise 30 to 40 minutes.

Bake in preheated 375 degree oven for 12 to 15 minutes until golden. Cool on wire racks.

(You may add a teaspoon of onion powder and about ˝ teaspoon dried onion to make the dough. It makes a light onion-y flavor that is wonderful!) For burgers, split and grill if desired.

To make by hand: Simply mix and knead the dough by whatever method you prefer. Let it rise for about an hour before shaping into eight big buns. (Or whatever shapes you prefer; hot dog buns, dinner rolls, etc.)

Chef Tomain,

If you want to try something unique.........Use a soft pretzel dough recipe and make them into buns instead of pretzels. Even an english muffin recipe would work for this. I did this a couple of times with rave reviews. I tried to find the recipes I had on file but they seem to be lost. I did find, however, a pretzel recipe in a search on line from Alton Brown. From what I read of the recipe it's similar to the one I used.

I'm still looking for that English Muffin recipe.......Man that made a great burger bun!!!!!!

BTW.......Lentil, not picking on you since I saw that wasn't your recipe but I still have to comment that 1/4 cup of sugar seems like an awful lot of sugar for 3-1/4 cups of flour and a Tbsp of yeast. I would think the bread would have more of a sweet characteristic........ but that's just me.

You're probably right, oldschool. I have made these before, but really don't remember much about them. I do know that they got rave reviews on the site, though.

I agree with you about english muffiin dough. We do a hot dog bun for our take on the usual and it is absolutely wonderful! Of course we also make our own catsup for this special... I think I hear that one calling me and it will make it on the menu this week!
