Default Spraying Pastries like Frozen Mousse

Hi there

I've sprayed frozen mousse with dark and white chocolate with cocoa butter successfully. I want to be able to do the same thing using different colors however would like to avoid adding food coloring to white chocolate. Does anyone have any ideas? I was thinking of using fruit puree or even a fruit glacage maybe the gelatin will help it stick and stay nicely. I'm looking for just a real fine finish and glossy if possible. Any suggestions? Much appreciated!!!!

I've never tried spraying on fruit glaces but have had sucess warming them slightly and pouring them over like ganache for a smooth shiny finish
