Are there any specialty product lines (or chocolate) you've discovered that great to work with?

Nielsen-Massey has a fantastic line of extracts that I love. Aside from using their vanilla extract and vanilla paste they offer peppermint, lemon, orange, almond, coffee and chocolate extracts.
