Default Cooking with disabilities

I've been a cooking show addict for a number of years now, but I've never seen anything on cooking with disabilities. As a chronic fatigue syndrome sufferer and cancer survivor, I would love to be able to do some cooking of my own, but I can't seem to get over the many hurdles in my way. Do you have any advice for how to cook with disabilities?

Some problems that hit me hardest are:
  • Standing for more than around 10 minutes
  • Fatigue
  • Muscle pain, aggravated by being in slightly awkward positions, like leaning over a cutting board
I'm sure there are lots of people like me out there with a variety of health issues who just don't know what to do. If you have any ideas I would love to get in the game!

I feel terrible that I have never even considered these issues before.
so, here are my quick thoughts,
1. prep sitting down. just make sure that the chair you are sitting in is high enough so that your arm is not way up in the air when you are chopping/prepping
2. if you have a food processor, lean on it heavily to do dicing, slicing, chopping. it can really speed up prep time. and finally
3. pick quick recipes and cookbooks that say they are quick. there is a whole series of books by Rozanne Gold based on 3 ingredients that are very good.
