Unfortunately, we didn't get any warning. I wish! That's what made the quickfire challenges so stressful. I saw Hung in LA yesterday, and I had flashbacks of that "15 minute" challenge. As you may remember, he was the guest judge. As far as equipment went, it was first-come-first-serve, which was why you would see us running around the kitchen.
