Default Apricot jam pork

I don't eat fruit jam often, but I had some apricot jam on toast a few days ago. It was yum but also gave me a really bright idea. I could almost taste my idea, pork chops marinated in apricot jam and dried chilis. Now I made it and it's at least as good as I thought it would be.

Sauteed in olive oil with garlic. Portuguese olive oil, mind you.

If you love that Oregon, you ought to try butterflying a pork tender and chopping up dried apricots along with maybe some toasted complementary nut and herbs of your choice then placing a thin coating over the meat along with seasoning. Then reassemble it and tie it and cook as you normally would. You can also do this with a pork loin. Then you can glaze with an apricot jam based glaze along with a liquor or wine of your choice and it's amazing! It's also great with lamb believe it or not!

Hi Oregon, I've also added cheese to this dish. I have done pretty mild goat cheese with it mixed with ricotta and cream cheese 1:1:1 then mixed it ice cold in "crumbly chunks" with the apricot. It's very good as is garlic with it.

pork and apricots....great combo.
pork tender with apricot jam, horseradish, dried mustard or spicy brown mustard....hit it with a tad of bourbon.
Sear pork them top with that mixture and finish in oven.


OR....apricot chutney.
saute onions, garlic add mustard seeds, chili flakes or chipotle or aleppo or combo, apple cider viniager, dried apricots, apricot jam optional, brown sugar (white sugar in a pinch) s&p, then after cooking for a while , I added fresh apricots.....ummmmm yummy and great with pork....

OregonYeti; Here is a tasty challenge. Asian-apricot glazed pork loin chops...whew! lol. Ingrediants are; a. 4 boneless pork loin chops b. 1/4 tspn.salt,black pepper,onion powder,garlic powder and 1/8th tspn ground ginger ,mix together, rub chops with mix. c. 1 large white onion, (chopped), d. 2 tbl. cooking oil, 3 garlic cloves minced fine. 3/4 cp. apricot necter,2/3 cp. apricot preservs. e. 2 tbl. soy sauce and 2 tbl oyster sauce, mix and set aside. heat a large pan adding oil and chopped onion, Brown onion and chops approx 5 min. per side. When chops are barowned on both sides, ( do ot use a fork to turn chops), add sauce mixture.simmer on low 15 to 20 min. untill chops are done to a internal temp of 170* and sauace is tickned. taste sauce (say yum).lol. add more pepper,oyster sauce or soy to your taste. serve over basamati rice, brown rice or ugg white rice,just thinking of your health. brown rice will give you good flavor and fiber...well thats about it,I hope you ;get a chance to try this it's...good cookin... cookie
