Not sure if mushrooms can be pickled successfully - anyone else have suggestions? I know you can marinate them with oil and vinegar & herbs and get a good result.

Lots of vegetables can be pickled - onions, cabbage, cucumbers, carrots, cauliflower. Lots of recipes on the web - try googling it and I'm sure you'll get some good recipes

The mushrooms are very good to pickles. You should try because it’s very good in salad and stewpot any thing really.

They can be pickled. I like to marinate them in a lemon vinaigrette with garlic and dry herbs (basil, oregano, rosemary).
