Asian sauces are pretty simple, IMO. One of the easiest and tastiest thing I do for my chicken dishes is this....

Combine 2 tsp soy sauce, 1 tsp rice wine vinegar, 2 tsp corn starch, sugar, and the chicken in one bowl. In other combine 2 Tbsp chicken broth, 1 tsp rice wine vinegar, and 2 tsp soy sauce. I use some dried chillies, garlic, and salt and pepper for seasoning. When cooking, I swirl in the chicken mixture first, let the chicken brown and then add the other bowl. It works great, turns out nice and thick and very tasty. Very simple.

Saute some chopped chilies, garlic and ginger in peanut oil until tender.

Add 3/4 cup dry white wine, 1/3 cup soy sauce, 1/3 cup brown sugar, and 2 tsp cornstarch and bring to a boil. (stirring)

When it thickens, remove from heat and cool, then add some lime juice.

mmmm goes good with shrimp or stir fry.
