I adapted this from a dish I read about in a book that was based in the region. I have no idea whether or not it is a traditional dish or just from the mind of some author but my wife and I love it.
What you need:
2 Boneless Skinless Chicken Breasts
1/4 Cup of EVOO
1 Large White Onions
2 Cloves Garlic
Pinch of Saffron
Freshly Ground Pepper
Freshly Ground Salt
5-10 Cherry Tomatoes or 1-2 large tomatoes
1. Grate the onion mince the garlic into a bowl.
2. Add your EVOO and Saffron and mix well.
3. Add salt and pepper to your liking.
4. Cut chicken breasts into Kebab sized chucks.
5. Transfer the marinade into a large ziploc freezer bag and add the chicken. Make sure the chicken is totally covered by the marinade and let sit in the fridge overnight.
6. Skewer the chicken with either a cherry tomatoes or a piece of tomato in between each and grill till the chicken is done.
One of the best parts about this recipe is that while the chicken is marinading you are left with a very savory smell on your hands
