| Try them Korean Style (galbi jjim). Braise in sweet white wine or vermouth and soy sauce with a little carrot and potato.

| I like to braise mine in red wine with lots of caramelized mirepoix, then reduce the braising liquid to a sauce and serve with horseradish mashed potatoes. I know, not very inventive, but to me, that is perfection so why change it?!

| I like to do mine in a mix of oyster sauce, soy, grated ginger to taste, carmelized onion, sake, a little garlic, beef stock and a little cayenne to cut out all the sweet you have going on. low and slow and they come out to be awesome. good luck, i might have to go buy some short ribs now........ |
