| Hey, I wanted to share this little Cajun recipe. It's a very traditional Cajun dish, and it's really quite good. If you have another recipe for Maque Choux, will you share it? Borrowed from: Maque Choux Ingredients:

| I have used this recipe for many years. Corn Maque Choux Ingredients: About a dozen ears of corn Cut the corn off the ears, saving the liquid Couple of vine ripe tomatoes. Diced One green bell pepper, diced One big Vidalia onion, diced Salt and fresh ground black pepper Good bit of Cayenne pepper, or hot Hungarian Paprika Butter Method: Sauté the bell pepper and onion in butter until the Onion is translucent. Add the tomatoes and the corn, along with the reserved liquid Cook on medium heat, until corn is tender, 20 min. or less. Season to taste. I like it spicy. The Maque Choux should not be dry. Add a bit of heavy cream if it needs more liquid. |
