Wasted Maque Choux

Hey,

I wanted to share this little Cajun recipe. It's a very traditional Cajun dish, and it's really quite good. If you have another recipe for Maque Choux, will
you share it?

Borrowed from: Maque Choux

Ingredients:
  • 8 ears of fresh corn
  • 1 chopped onion
  • 1/2 chopped green bell pepper
  • 1 stalk of celery, chopped
  • 1 chopped green onion
  • 1 cup of cubed salt meat
  • 1 tablespoon of vegetable oil (or bacon grease if you can get it)
  • 1 tomato chopped
  • 2 teaspoons of salt
  • 1 teaspoon of black pepper
Instructions:
  • Scrape the corn to remove the kernels
  • In a pot over medium heat, cook the onions and meat with the oil until they are lightly brown.
  • Add the celery and bell peppers to saute them.
  • Add the tomatoes and corn. Cover and let them simmer on a low heat for 30 minutes.
  • Add the green onions and the seasoning and let simmer, covered, for another 10 minutes.
  • Enjoy your maque choux!

I have used this recipe for many years.


Corn Maque Choux


Ingredients:

About a dozen ears of corn
Cut the corn off the ears, saving the liquid
Couple of vine ripe tomatoes. Diced
One green bell pepper, diced
One big Vidalia onion, diced
Salt and fresh ground black pepper
Good bit of Cayenne pepper, or hot Hungarian Paprika
Butter

Method:

Sauté the bell pepper and onion in butter until the Onion is translucent.
Add the tomatoes and the corn, along with the reserved liquid
Cook on medium heat, until corn is tender, 20 min. or less.
Season to taste. I like it spicy.
The Maque Choux should not be dry. Add a bit of heavy cream if it needs more liquid.
