Default pork chop recipe anyone?

Hey Everyone,

A friend told me to check out this site for some great recipe ideas and I am loving what I'm finding! I did a search but might not have used the right key words to find what I am looking for, so I thought I might take a chance with posting my own thread and see what happens!

I work odd hours during the week, sometimes very long days, and hate cooking when I get home since I am tired and hungry right then. I have found a few recipes for stuff I can cook on Sunday and freeze meal-sized portions for the rest of the week, and that is awesome for me and my schedule! I made a beef stew this week that was amazing for me (as my cooking skills are decent, but nothing to write home about!) and worked perfectly for my freeze and thaw the night before routine goes.

I have a bunch of pork chops and am wondering if anyone has a recipe idea of something that is simple and I can make it today or tomorrow, but is okay to freeze and thaw/reheat during the week for dinners. I really want to make something with these pork chops, but just dont have any ideas other than a simple frying/grilling them or baking them in the oven with a "cream of..." soup.

I am good at following recipes, but only have basic pans - nothing too fancy. I also have a crock pot, a big one, but again, my main criteria for the recipe would be it is something I can freeze for later in the week.

Hope to hear some great ideas, but for now I will get back to looking up other yummy recipes here that I would love to try on the weekends when I have more time for cooking! Yum!

Pork chop in onion gravy.

Here's a fairly straight forward version:

Take some apple juice, or better, cider, about half a quart or more, add ground or cracked black and pink peppercorns and cracked coriander seeds and a little salt. Add a red onion cut in half. Boil till it reduces to about 1/4 cup.

Then cook a pork chop in the frying pan until done, remove. Add the apple reduction to the pan, boil a minute scraping up the brown stuff on the pan, add a small piece of butter, when it melts pour over the pork chop.

I don't know what sort of pork chops you have, how thick they are, bone in or not, so this idea may not show them off at their best. But it is pretty quick and easy. Dice the meat from a chop or two, slice up a couple of green onions. Stir fry the pork in a couple tablespoons of oil in a hot skillet until just about done, add maybe 1/4 cup peanuts, stir fry another minute or so, add the onions, splash in some soy sauce, another minute in the pan, then eat, as is or over rice. Quick, simple, tasty.
