Default oil free prawn recipe

Ingredients


500 grams prawns cleaned
1 cup coriander leaves (Cilantro)
Few mint leaves
5-6 green chillies (according to your taste)
½ coconut grated (frozen or fresh)
3 tsp of lime juice
1 tsp of sugar
1 tsp of cumin seeds
1 small piece ginger
Salt to taste
Butter paper to use while steaming.
3-4 flakes of Garlic

Method
Grind all the above ingredients to a paste, except the prawns.
Mix the prawns in the paste.
Allow it to rest for 2min.
Wrap the prawns individually in butter paper.
Steam on either side for 10 minutes.
Serve hot.

Sounds good. By butter paper - do you mean grease proof/baking paper, or a wrapper off a stick of butter?

This is very similar to something I did last night. I make my own green chili powder with Jalapenos, Serranos, Anaheims, and Poblanos. I seed the chiles, and then blanch them. After a trip through a dehydrator along with fresh cilantro, I grind the chiles and cilantro with toasted cumin seeds, coriander seeds, oregano, and granulated garlic.

I used this along with some kosher salt, and lime juice as a rub with some prawns, and then grilled them. I chose to use no oil, and they were some of the best prawns I've ever cooked. The mint, coconut and the sugar would create a completely different flavor profile, making your dish a bit more complex.

Re: butter paper: I think it was meant to say, "Butter some paper to use while steaming". I'd use parchment paper.
