Default Dinosaur (Lacinato Blue) Kale

Yesterday I bought a bunch of very fresh Dinosaur Kale at the local farmers' market, and this evening I added about 1/2 the bunch to a bowl of semi-home made lentil vegetable soup. This was the first time I've had dino kale, and it sure was good!

I went searching for recipes using this kale, and found a few that looked interesting. One included a soup made with the kale, potatoes, and jalapenos that I'll be sure to experiment with. I put some jalapeno in my lentil version - great addition.

Anyway, if anyone has some recipes or ideas for using dino kale, please post 'em. Im just starting to enjoy greens, and have slowly been working my way through the produce bin trying different kinds and varieties.

I haven't tried those, but I love about any greens. I've gotten great suggestions here for dandelion greens and collard greens.

I know not only that you can use it like you did in your soup but we are taught the "traditional" way to cook it is to braise it which alot of people will tell you to do with some nice belly or bacon of a sort with some onions, garlic, shallot (all minced) and some s&p.

Give it a try! Youll like it like that trust me! How could you not if its got those ingredents!?

Slap that on a place with some mashed and fried chicken emmmmmhummmmmmm. so good! (Yeah i know its not colarded but close enough!) or pair it with some cheesy polenta. And beleive it or not kale also pairs very very nicely with butternut squash or any squash for that matter........

Thanks for the suggestions. I'm not that crazy about bacon, although I found some lean, center cut slab bacon that I'd like to try. Cutting it thick and cooking it on a rack in the oven may help to eliminate most of what I dislike about bacon.

But I do like the idea of braising the kale with some aromatics. Squash seems like a great pairing ... good idea.

No problem. Always looking to help a fellow food lover. Give it all a try and be sure to let me know how you think, and to be quite honist im interested to hear about how it is with the bacon you use and if its more of a jerky like texture when your through with the oven.....
