Jalapeño-Garlic Paste ~~~~~~~~~~~Jalapeño-Garlic Paste~~~~~~~~~~ Sometimes all it takes are a few simple ingredients to give you some great flavor. Roasting garlic and jalapeño together, and adding some extra-virgin olive oil, gives a taste that is far more complex than it seems. Believe it or not, it's marvelous on grilled tuna and swordfish. I first made this back in 1991 and rediscovered it today while organizing my 'que and grilling files. The recipe halves and doubles easily. ---------- Stem, seed, and devein, a pound of green jalapeños. Make up two pounds of peeled garlic cloves. Put them, along with about 1/2 cup of water and a cup of EVOO, into a roasting pan set in a 350-degree oven. Roast for an hour or so, then remove all the ingredients, including the liquid in the pan, and give it all a good whirl in the food processor to make a nice puree.
