blueberry syrup, speaking of pancakes Speaking of pancakes, as one of the posts was doing, made me hungry.
I like the idea of blueberry pancakes, but the blueberries, if fresh, always are tasteless (i only have access to the commercial ones) as well as incredibly expensive, but if frozen, they make your pancakes a terrible grey. In either case, they stick to the pan and burn black polka dots on the surface of the griddle.
But what i REALLY like is blueberry syrup. And then you donl;t even notice there are no blueberries in the pancakes. I usually make it while cooking the pancakes.
I do it all by eye - put about equal parts of sugar and water in a small pot. Bring to the boil and let it boil till the bubbles start to get a little thick. Turn off the gas and pour a bunch of frozen blueberries in, enough to sort of mound up a little over the level of the syrup. The cold blueberries cool the syrup, the syrup defrosts the blueberries. Stir a little. They will be perfectly cold and defrosted when you;re ready to put on top of the pancakes. A tiny bit of grated nutmeg really enhances the blueberry taste. But go lightly with it, it shouldn;t be detectable, just delectable. |
