coming from the island ginger beer is a local favourite however I have never used any other sugar but regular I am sure you can replace regular sugar with whatever you prefer so here is my recipe for ginger beer island style 8oz fresh ginger root, (scrubed, washed throughly and grate with a medium grater) place grated ginger in a large pitcher and cover with water about 1 gal, add the following which are optional fresh lime juice, 2tsp uncooked rice, cover and let seep for about i hour or in a refrigetor overnight. strain in a muslim cloth or fine strainer sweetned to taste ad a dashof vanilla extract and thats it enjoy its no problem man beaches

I used to make ginger tea by simmering sliced ginger in water with lemon peel and a cinnamon stick. At that time I was eating sugar, so I used dark brown sugar to sweeten it. I bet that, if you made it very strong and sweetened it with Splenda, you could add it to sparkling water for a nice beverage. Whether or not that qualifies as "ginger beer", I couldn't say. But I bet it'd be great! (Too bad I can't drink it anymore- that much ginger is too irritating for my stomach). Let us know what you try and how it comes out!

CoolJ,

What did you use for sweetener finally? Sugar or Splenda?
