| Hi there, I have tonz of recipes, but right now I can't decide which cake to bake for tomorrow...I thought of something christmas-like(spices!), just no fruitcake.Please, share your favorite with me |

| CHOCOLATE SHERRY CAKE This cake is beautifully light and moist with good, rich flavour. It is also a great 'keeper', if it lasts that long! An added bonus is that is that it is prepared in one pan. Angel. Ingredients~~ 1½ cups sugar ¼ cup sweet sherry (*) ¼ cup water 4 Tablespoons cocoa ½ lb butter 4 eggs -- separated 1 teaspoon vanilla essence 1 cup self-raising flour Method~~ Boil together sugar, sherry, water and cocoa. Add butter to mixture. Allow mixture to cool. Separately beat 4 egg yolks well and add to above mixture with vanilla essence. Reserve ½ cup of this mixture for topping. To remaining mixture, add flour and fold in beaten egg whites. Bake in greased pyrex dish 20cm (8") 20-30 mins at 180º C. (350º F). Remove from oven, poke cake in a few places and pour over topping. Decorate with vermicelli (**) and cherries (*) I sometimes use all sherry, omiting the water, especially if it is for a special occasion...great!! hic (**) Vermicelli is also known as 'Chocolate Spinkles' Also great iced with chocolate cream frosting and decorated with glacè cherries and mint leaves, or angelica. | Jesse, Hope you like it as much as my family does. It is also lovely if you cut each layer in 2; ending up with 4 layers. Then sandwich them together, with heated apricot jam, and top of with coffee cream frosting and decorated with walnuts. Merry Christmas to you and yours. ------------------ ***(\o/)*** |
