I love hawaiian chicken, but try this recipe for a little more flavor. Instead of using water as a part of your marinade(no flavor,dilutes the pineapple and the syrup)
use unsweetened pineapple juice. Here's my recipe: perfect for two
>2c unsweetened pineapple juice
>2t lemon zest
>coarse black pepper(fresh if you can)
>1/2c tropical liqueur (any flavor)
>>Combine above ingredients and pour over 2 breasts of chicken that have been pounded slightly. Allow to marinate for at least 1 hour.
Remove chicken from marinade and set aside. In a small saucepan, bring marinade to boil and cook until it reduces by half.
>While marinade is reducing. prepare rice.
>Fine dice 1 each of red, green and yellow peppers (or to make it really pretty substitute orange for green) and 1 small onion.
>In a hot 1-qt saucepan, saute' onions in 1T butter until slightly translucent; add peppers.
> Once onions are clear(not brown) add 1 cup rice ( Uncle Ben's is the best for this). Saute rice with other ingredients for 2 min or until rice becomes a little translucent itself> Add 2c. water and bring to boil, reduce heat, cover and simmer for 20 minutes or until water runs out of rice.
>>FOR CHICKEN: In a extermely hot saute pan, heat 2 oz of oil; cook chicken until done.
****THE FINALE****
Split rice equally between two plates. Place a chicken breast onto each. Add a slice of of fresh pineapple fresh from the fridge
to each dish and pour tropical sauce on each. Garnish with a subtle herb. Add more sauce depending on your taste. Ouila!! Let me know if you like it.
