stuffed peppers

Try this recipe for stuffed peppers:

2 peppers(red,yellow or green)
diced feta cheese
pan fried mushrooms(about 3 med size)
rice(boiled and cooled)
1 teaspoon olive oil
mixed salad leaves

cut the tops of 2 peppers(keep the tops)
remember to deseed them
mix together pan fried diced mushrooms,fetta cheese,rice and olive oil
once mixed together spoon in to peppers and place the lids back on
place in a pre heated oven g/m 6 for approx 15/20 mins
serve on a bed of mixed leafs
and enjoy trust me i know you will

The recipe sounds excellent, but at what temperature do you cook them, 375 degrees?

bet that would be good using tomatoes instead of peppers......I have to do about a dozen veggie meals a day and they had stuff peppers on tuesday.......going to give it a try...will let ya know!
