How many of you have heard of this?

Hey, I'm just wondering how many know that feta goes very well with watermelon? If so, why don't I see it in restuants?! It is a great pairing!

You know, I think I saw a recipe in one of Todd English's cookbooks. Oh yes, here it is in "The Figs Table". Fennel, watermelon, and Black Olive salad with Feta Cheese. You have inspired me and now I must make it.

Being Greek the thought of Feta with watermelon is something I have ever seen. It has always been with olive oil, a little oregano, salt, black pepper, red wine vinegar, and thinly sliced red onions. I would like to try this though.

i would assume the saltiness of the fetta cheese would increase the sweetness of the watermelon.
