Post BEEF MARINADE

HELLO,
IM LOOKING FOR AN ALTERNATIVE FOR BEEF MARINADES. SOMETHING OTHER THAN RUBS,VINEGARS AND TERRIYAKIS I NEED SOMETHING FLAVORFUL AND DIFFERENT I HAVE BEEN EXPERIMENTING BUT IM NOT HAPPY WITH ANY OF THEM. ANY SUGGESTIONS WILL BE GREATLY APPRECIATED

You could try using cracked pepper, crushed garlic, and groundnut oil. Rub on steaks and marinate in plastic bags for 4 days in frig. You can saute these (press on extra cracked pepper), then deglaze the pan with good flamed brandy and Beef stock. Then add reduced heavy cream and further reduce to thick sauce. Season. This is a very basic recipe, I would play with different herbs and spices in the sauce to your own taste.

One of my favorites is bourbon and honey. Not much honey, just enough to sweeten the marinade a little and to help caramelize the outside of the steak. Also add a good amount of cracked black pepper.

Well I know this might sound strange, but use some stuff that you might do with chicken, Like Orange Juice, mango Juice, and so on. I did a Orange Juice, Mango, Honey and Cilontro (Sorry my spelling is off) and with a little Chilli powder and some garlic as a marinade. And I got to say it came along great with the beef.

Have you ever tried infusion? You can use a hypodermic needle to infuse any flavors you like into the meat. Herb reductions work great.

Infusion needles are available in many gourmet kitchen shops. If you can't find one there, yes, you could use a medical supply issue hypodermic needle. Needless to say, it must be a new, sterilized needle. Before these became available to the public (they are marketed to infuse liquor into fruit) I got a large horse needle from a Veterinarian friend.
