| I just had a delicious mint brownie from my local library here. I asked the person at the counter if she knew how to make these brownies but she doesn't. Mint is one of my favorite flavors in desserts. Does anyone have any good desserts like this I could try? If I could describe the brownie I just had for you, would you be able to tell me how I can make these at home? The brownie I had was sooo delicious, this topic is making me want to go back and order another one! If anyone would like to help me here, I can describe the brownie for you. In the meantime, I would like to thank everyone in advance who responds to this topic, as I have never seen nor tasted such a brownie as I just had before. |

| Afra, I know www.cookinglight.com has such a recipe. They use jr. mints to flavor them. Go to the site and click on recipe search and then type in brownies. The one you want should come up. Or, you can buy mint extract at the store and add a teaspoon or so to your favorite brownie recipe. It will be in the same section with vanilla extract. Most grocery stores cary it. Enjoy!

| Thanks, but the brownie I had looks more than just a regular brown brownie; I went to the site you suggested but the brownie pictured there doesn't look like the one I ate. The brownie I had had a green layer in the middle of it and the whole thing had a sweet taste of delicious mint. I wish I could show you a picture of it but I don't know how to put pictures in the computer and even if I tried, I don't think I shall be able to anyway. You know how cakes that have layers in them look, don't you? Well, that's what my brownie looked like. The brownie looks like the regular brownie on the outside, but in the inside you can see that there is a green layer in between the brownie batch and that is the mint frosting (or whatever it is because it didn't taste exactly like frosting to me). The brownie I had tasted more like cake than like a brownie. If anyone could respond with more help and suggestions, I would greatly appriciate it! |

| It's likely the baker poured half the brownie batter into a pan, then poured in a filling made of sweetened condensed milk, mint extract and green food coloring, then topped it off with the remaining half of the batter. You could probably use a brownie mix if you want. Have you considered asking the people who you got it from for the recipe? Also, check out some pastry books from your local library. I think there is a recipe for "Grasshopper Brownies" in one of Maida Heatter's dessert cookbooks.

| Thanks for the cookbook suggestion, foodnfoto, but like I said before, the person who gave me the brownie doesn't really have a recipe for making these; she doesn't really know how to make them. She doesn't even know where I can find these brownies. I'll look at some cookbooks soon. I wish I could find a picture of this brownie I just ate; it was sooo good! |

| I think I know the answer, Afra, and its easier than a whole new recipe! As long as you have a brownie recipe you like, the mint is easily added- just use mint extract instead of vanilla. I do this with natural orange extract frequently because I can't resist the orange chocolate combo, but it will work equally well with mint, possibly even better since mint is such a permeating flavor. Even if you're using a mix, adding some extract won't alter the recipe all that much. Good luck! ~~Shimmer~~

| Here's some links that may help you find your mint brownie recipe: Indiana Mint Brownies Epicurious Mint Brownies These two recipes are pretty similar and so were most of the 'layered' mint brownie recipes I found online. I'll check my books at home and see if I have any that are more cakey throughout. |

| Afra, I have a recipe with a filling that could easily be made "mint". Use 1 cup of marshmallow cream, 1 can of sweetend condensed milk, a tsp or so of mint extract and a few drops of food coloring. Mix all the ingredients together. Mix your favorite brownie recipe. Put half the mix into a baking dish, layer the mint filling and then top with the other half of the brownie mix. Have fun trying out the new recipes. Even if you don't recreate the one you had you may come up with another recipe you like even more!

However, I thought it would help you more in understanding what kind of brownie I had, so I copied the name of the brownie just now (I am at the library again and I just had another of those brownies). The library's Cafe has them listed as "Chocolate Mint Bars". Does this give anyone a clue as to what I am really talking about? Once again, thanks for all the help and I look forward to trying all the delicious recipes that are listed here for the brownies! |

| Ok, everyone, I think I just stumbled across the recipe I was looking for...I found it in my parish's cookbook this afternoon; when I was looking at the recipe and procedures on how to make the brownies out of this book, they sounded exactly how the brownie I ate looked. Here's the recipe I found: Mint Bars Brownie: 1/2 cup butter 1 cup sugar 4 eggs 1 cup flour 1 (16 oz.) Hershey's syrup 1 tsp. vanilla extract Filling: 1/2 cup butter 3 cups powdered sugar 1/4 cup cream 5 to 6 drops of green food coloring 1 tsp. peppermint extract Topping: 1/4 cup butter 1 (6 oz.) chocolate chips Directions: Brownie: Cream butter and sugar. Add eggs, one at a time. Add flour, Hershey's syrup, and vanilla extract. Spread in a greased 17x11 inch pan. Bake at 350 degrees for 20 minutes. Cool. Filling: Cream all ingredients together. Spread on cooled brownie. Refrigerate. Topping: Melt together. Spread on filling. Refrigerate. ****** I just found this recipe so I haven't made it yet. I hope that when I do make it, though, it will turn out to be exactly the same brownies I find in my library. The recipe sounds so similar to the brownie I have been eating. | Shimmer, I just had to respond....I add mint extract to my regular brownie recipe....but ORANGE I never thought about that! I love orange chocolate! Afra, Bordens which makes sweetened condensed milk has several cookbooks. They definately have the mint brownies your mentioning and it's very likely the person baked the brownie you tasted would have used that recipe seeing how well known and popular they are (unless you tasted them at you church). If your recipe doesn't turn out exactly as the ones you tasted, come back here and I'd gladly post you the recipe from bordens.

| Afra I just re-read you original post. If you love mint, you could have it in tons of items with-out looking up recipes that list mint. Just add a teaspoon of mint extract in any of your favorite cakes, cookies or brownies, even many other items like cheese cake, pudding, pies, frosting, etc.... you can create your own recipes this way. Don't forget to use mint chocolate chips in your chocolate chip cookie recipe. If you ever make homemade candy you can also use those mint chips in place of regular chocolate and the recipe will work fine. So then you can make mint fudge or mint truffles.

| Hehe, thanks for the suggestions, but I had the brownies at my library, not at my church. I never saw the recipe in the cookbook until the other day because I never looked at the cookbook that close. I have used mint in other things, like cake frosting and chocolate chips, and I even remember making cookies with white chips that are shaped the same way as the chocolate chips, and yet taste like mint. Hehe, those cookies are my favorite cookies for the holidays! |

| Well, everyone, since I found the answer to my own question on August 2, I am thinking about trying the recipe I found today. I am about to go to the store and buy the ingredients I need. When I come back later, I will let you know of the results-whether this recipe is the same as the brownie I have at my library or not. If it turns out to be the brownie I am looking for, I will be very happy that my question has been answered. Funny that we sometimes find answers and solutions in odd places, huh? |

| Well, everyone, I made the recipe last night like I said I would. And guess what? This recipe did indeed turn out to be exactly the same brownie I have been eating at my library! Try the recipe; I think you'll like it. I do! And, by the way, I really appriciate all the help that everyone gave me so far in trying to find the recipe for me until I stumbled across it myself. |
