Talking Garlic & Onion Jam

Someone please help me!!!

Garlic & Onion Jam (or marmalade or salsa)

I have been looking for this recipe for months now. I bought it for someone else, and when I tasted it I feel in love! Now am trying to find the recipe, since I can no longer find the product itself!
*Please Note*
This recipie produces a product with a very
intense flavour!

i think what you are looking for, without knowing exactly what it is....is a slow(I mean really slow..)cooked caramelized onion and garlic marmalade. I make them often as a garnish for a fish, or venison or whatever...
I often add some port ( for sweetness) or some type of vinegar... You can stay in the oriental realm and add rice vinegar, or cider, or balsamic to add sweetness through the slow reduction. I try to avoid adding sugar, and make use of the natural sugars in onions and garlic when they are SLOWLY caramelized. Honestly, the trick is in SLOW.

Slice some onions (about 2.2 lbs/ 1 kg) into thin rounds, then place in a large stainless steel pan. Add 8 cloves of garlic, sliced thin, 1.1 lbs (1/2 kg) brown sugar, 1 tbsp molasses, 1 tbsp freshly ground black pepper, 1 tsp sea salt. You may want to add a little sprig of rosemary, or thyme - I don't normally, but it gives the marmalade a different dimension.
Bring to a boil then lower to a simmer. You'll need to stir the jam/marmalade from time to time, so watch it. Simmer for about 1 hr and you should have a thick-ish marmalade which you can then bottle and save for the future.
1 hr - well that's really a guideline. I've got industrial cookers so the heat is a little more intense; you may find you need more time.

By the way, duly copied!! I've made horseradish jam, but not garlic and onion.
