Talking fish recipes

hi people
as a chef working in a seafood restaurant in the u.k. it would be cool if you could throw down any recipes for fish or shellfish doesnt have to be full recipes just titles would be cool but i leave it up to you
here are a few of mine
roasted seabass with sherry and saffron sauce slow roasted onions and peppers topped with rocket oil and pinenuts
baked halibut fillets glazed with preserved orange butter and marinated plum tomatoes
deep fried basil and lemon crusted crab in its shell with italian style vegetable pickles
looking forword to hearing from you lot

I have so many, but I'll sharea a couple of my personal favorites...

Alaskan yellow eyed snapper pan seared (skin on ) over Swiss style Rosti potatoes with black mission figs and a cabernet-balsamic vinegar reduction...

Salmon with an oyster mushroom and leek saute, lemon grass beurre blanc and a ponzu drizzle.

California white sea bass over a panfried noodle cake, with thai red curry sauce, thai eggplant, asparagus and scallion saute.

That's a sampler from my daily specials...

thanks for the dishes they sound great
like the salmon dish,salmon over here gets a bum deal so lam always trying to come up with new ideas to give it a boost!!

Too bad salmon gets a bad rap in the UK. This season I have been grilling it and serving it with a hamemade basil aioli (1 egg, 1/2 c canola oil, 1/2 EV olive oil, 3/4-1 cup basil chiffinod, 8 cloves garlic, lemon juice) to rave reviews. I'm getting tired of it but friends and family keep asking for it, and some don't even like salmon (or didn't).
Also, grilled sea bass with a tomato/olive relish - delish.

I have a great recipe for Oven Fried Orange Roughy. You roll it in flour, then dip into buttermilk, then into breadcrumbs w/ a spice mixture. SO creamy & delicious!

we used to serve grilled salmon on pesto risotto with red capsicum sauce .... also snapper grilled and served on artichoke potato mash with lemon juice and butter reduction.

simplest meals always seemed to sell the best

Thanks to all on the recipes. I have an easy and upscale fish recipe I did today for a special.
Braised Salmon filet in a oyster and morel mushroom broth served in a pasta bowl over Romain Franchese and safron infused Rice.

If you have access to fresh lemon-basil (check with a Thai or other SE Asian grocer or farmer), it makes a delightful substitute for regular basil, and is perfect with fish.

Tuberose? Is that really your name? or what's up with that? I used to live in Hawaii and they are my favorite flowers. Especially for leis.

Here's one of my favorites to run:
Smoked Salmon wrapped in Halibut on a bed of roasted fennel and bacon hash with a sweet corn cream sauce.

Another on I like is: Pan-seared Tuna (rare) with black olive risotto and a spicy ratatouille vinaigrette.

We live in salmon country, with fish at our doorstep. Our personal preferences are:
1.Poached whole, glazed in dill mayonaise, served cold.
2.teriyaki, served with fresh mango chutney
3.cold smoked and barbecued
4.blackened with cajun spices
5.baked in ranch dressing, covered (better than it sounds)
