| Just curious, why would you want to make a quiche without a crust? |

| Sara, I have never heard of a crustless quiche. My guess is that if you want to make a crustless quiche you could just take your favorite quiche recipe and put the batter in a 8 1/2 inch to 9 inch round pan and bake it slowly (350 degrees) in a water bath. A quiche is nothing more than a custard and when you bake a custard something such as a timbale, you typically do so in a water bath. | Wouldn't that just be a savory custard or a mousse? Water bath is the answer, though. I would also suggest you butter whatever container you use... whether it be a pie pan, or individual ramekins. |
