Sara,
I have never heard of a crustless quiche. My guess is that if you want to make a crustless quiche you could just take your favorite quiche recipe and put the batter in a 8 1/2 inch to 9 inch round pan and bake it slowly (350 degrees) in a water bath. A quiche is nothing more than a custard and when you bake a custard something such as a timbale, you typically do so in a water bath.

Wouldn't that just be a savory custard or a mousse? Water bath is the answer, though.
I would also suggest you butter whatever container you use... whether it be a pie pan, or individual ramekins.

Hi, Thought you might be interested in this no base quiche from down under. I use it quite a bit as it is quick and easy. Any fillings may be used along with egg and cheese

4 oz chopped bacon
4 eggs
4 oz grated cheese
1 finely chopped onion (medium)
generous 1/2 cup of self raising flour
1 cup milk
1/2 cup cream
1 tablespoon finely chopped parlsey
salt, pepper & mixed herbs for flavour

mix all ingredients together well

Pour into greased deep dish or quiche plate

top with sliced avocado or tomatoes

Bake at 375 degrees until set (approx 3/4 hour)

Hope you enjoy!!
