Asian Chicken salad
rice vinegar-6oz
soy sauce-4oz.
sugar-2tbsp
ginger,minced-3tbsp
boneless,skinless chix breast-1lb,8oz.
sesame oil-1oz.
snow peas-4oz.
carrot,julienne-4oz.
celery,julienne-4oz.
jicama,julienne-4oz.
cilantro-2tbsp
combinevinegar,soy,ginger,sugar,and 1 tsp white pepper
cut the chix into1/2 by1/2 by 3 in.stir-fry in the sesame oil
blanch the veggies in salted water,refresh and drain well
combine the chix with veggies and the dressing,add cilantro-toos and serve
enjoy!!!!!!!!
p.s.we run a chix salad on lunch occasionally called "black n blue" chix salad very good --blackened chix using blue cheese dressing,onions,celery etc. give it a try-you wont regret it
