| Hello, Does anyone have a good recipe for sugar free preserves, any flavor. Also a recipe for tomato preserves? thanks |

| This might help. Splenda is my artificial sweetener of choice. Sugar Free Peach Conserve 7 cups peaches -- chopped 1 medium orange -- peeled, chopped* 5 cups splenda 2 tablespoons lemon juice -Wash, peel, pit & chop peaches & measure out 7 cups. -Wash orange, peel; put* peel through a fine chopper;chop up meaty part of orange. -Mix the peaches, orange & peel together;pour into large pot, boil for 30 minutes. -Add the splenda & lemon juice; stir until splenda dissolves. -Continue to slow boil until thick -Remove from heat & pour into hot sterilized jars, leaving a 1/2" headspace. -Clean jar rim, seal with lids & screw bands;process in boiling water bath canner for 5 minutes. -Makes approximately 4 pints -NOTE: Conserve is quite sweet so a little will go a long way! Excellent topping for pancakes, waffles & crepes - - - - - - - - - - - - - - - - - - ![]() |

| I don't have any recipes, but if you want sugar free preserves, and you don't have time to make them, you can buy the All Fruit products.

| Cuisine Magazine had a recipe in August, 2001 for a Tomato Jam that only had 1/3 C of Brown Sugar and 1/4 C Honey to 4 C of tomatoes. Is that too much for you (assuming you also want sugar-free tomato)? Food & Wine had one for Tomato Jam in August, 1999, with only 1 T + 1 tsp of honey to 2# of tomatoes, and no other sugar. If either of these might suit, and you can't get them on the net or from back issues at the library, let me know and I'll post them. I also have several recipes for green tomato jam and preserves made with yellow tomatoes, but they all have the usual ton of sugar (even the one from Certo Pectin!). |

| Preserves without sugar? I have tried many recipes because I love any kind of preserves since here we have plentry of vegetables and fruits to experiment with. Trust my word. If you do not have someone diabetic in the family ( especially a kid), it doesn't worth the try to make them. They just don't taste good if you use honey or black sugar. In the case you must prepare them, use fructose instead of sugar.In Greece is relatively expensive, I have no idea on how you consider fructose in the States. But it's the best solution. ![]()
