Default mayonaise

Hi guys~
My sister has an even more limited diet than I do.
She needs a good barest of bare bones recipe for mayo.
No sugar no whatever.

3 egg yolks
1 teaspoon salt
pinch of pepper
2 tablspoons lemon juice
1 cup safflower oil
.5 cup olive oil

Whisk the egg yolks, salt pepper, and lemon juice until smooth and kind of ribbony.
Slowly add the oils until the consistency desired is reached.
Sometimes you won't need as much oil.
The fresher the eggs the less oil needed.
Adjust the seasoning.

I remembered the other factor...she cant have separated eggs...sorry I didnt narrow it down before.

Firepatrolchef,
I'm not a pro, but as far as I know you cannot make mayo with whole eggs...but I don't think this is the main problem. Why does your sister have such a limited diet? Is she supposed to lose weight, or has some disease (diabetes, heart disease and so on) requiring a specific diet? If the issue is limiting the caloric intake and/or fats, mayo must be just AVOIDED as it's very caloric and rich in fats. I've never heard about a hypocaloric diet allowing mayo!
In any case, the best way I know to make a light but tasty mayo is mixing it with plain joghurt. I love it even more than the "normal" one.
