| Does anyone have a recipe for Pumpkin Chiffon Cheesecake? I have a special request to make one for Thanksgiving dinner and I'd like to oblige. Thanks. [This message has been edited by botlet (edited September 29, 2000).] |

| I have, for years, made a basic cheese cake and added pumpkin and spice to much success. Off the top o' the noggen: 3# cream cheese 1/2 # unsalted butter 1# brown sugar 2 # pumpkin 2 tsp ground cinnamon 1 tsp ground clove 2 tsp ground ginger 1 tsp ground mace 2 tsp ground cayanne 2 tsp salt cream with a paddle until smooth add 10 yolks continue until smooth. 10 whites 1/2 # sugar whipped to soft peaks. fold together and bake in water bath in greased and floured pans with whatever crust desired * graham cracker is good, so is ground up ginger bread cookie and butter crust*. 350 degrees F. ![]() What is your fav cheese cake formula? re-balance with pumpkin and spices. |
