Default Baking Recipes?

Hi all,

The cool weather has got me in a baking mood, does anyone have any specific recipes they enjoy making and eating they'd be willing to share? (bread, pastries, etc?)

Funny how the weather makes me want to bake stuff too. So far its been brownies, cookies, and muffins. I ran across this recipe while looking for presents for the holidays. They have a recipe page, and I found this brownie recipe there. Yummmm.

They have other good baking recipes as well. But here is the Brownie recipe that I used.

Black Walnut Chocolate Kiss Brownies
1 1/4 cup butter, melted
3/4 cup cocoa
2 cups sugar
4 eggs
1 Tbs. vanilla
1 1/4 cup flour
1/2 tsp. salt
1/8 tsp. baking powder
1 cup Hammons Black Walnuts
1 cup Hershey`s mini kisses, semi-sweet

Preheat oven to 350 degrees;. Grease and flour a 10 ˝ x 15 ˝ x 1 inch jelly roll pan. In a large mixing bowl, combine butter, cocoa, sugar, eggs and vanilla; blend well. Stir together flour, salt and baking powder. Stir into cocoa mixture until smooth. Add black walnuts and mini kisses. Spread evenly in the prepared pan and bake 25 minutes on middle oven rack. Cool before cutting. Optional: individually warm cut brownies slightly before serving. Makes 3 to 5 dozen.

Topping
1/4 cup Hershey`s mini kisses, semi-sweet
2 Tbs. milk
Black Walnut ice cream, optional

Melt mini kisses over low heat, stirring continually. Stir in milk. Drizzle over warm brownies just before serving. If desired, top with black walnut ice cream

Apple-Cider Doughnuts wiith Maple Glaze

Doughnuts
Approx. 3 Tbsp. sugar for preparing pans
2 cups all-purpose white flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. ground cinnamon
1 large egg, lightly beaten
2/3 cup packed brown sugar
1/2 cup apple butter
1/3 cup pure maple syrup
1/3 cup apple cider
1/3 cup nonfat plain yogurt
3 Tbsp. vegetable oil, preferably canola oil

Maple Glaze
1 1/4 cups confectioners' sugar, sifted
1 tsp. pure vanilla extract
1/4-1/3 cup pure maple syrup

A mini-Bundt pan produces adorable doughnut-shaped cakes, but if you do not have one, you can use a regular Bundt pan and make a coffee cake; bake it in a 375-degree F oven for 25 to 30 minutes.

To make Doughnuts:
Preheat oven to 400 degrees F. Coat molds of a mini-Bundt pan with nonstick cooking spray or oil. Sprinkle with sugar, shaking out excess.

In a mixing bowl, whisk together flour, baking powder, baking soda, salt and cinnamon; set aside. In another bowl, whisk together egg, brown sugar, apple butter, maple syrup, cider, yogurt and oil. Add dry ingredients and stir just until moistened. Divide half the batter among the prepared molds, spooning about 2 generous tablespoonfuls of batter into each mold. Bake for 10 to 12 minutes, or until the tops spring back when touched lightly. Loosen edges and turn the cakes out onto a rack to cool. Clean the mini-Bundt pan, then re-coat it with oil and sugar. Repeat with the remaining batter.

To make maple glaze:
In a bowl, combine confectioners’ sugar and vanilla. Gradually whisk in enough maple syrup to make a coating consistency. Dip the shaped side (underside) of the "doughnuts" in the glaze to coat. Then set them, glazed-side up on a rack over wax paper for a few minutes until the glaze has set.

BEE HIVE CAKES

Heat oven to 350F. Grease and flour 6 individual miniature bundt pans.
In an electric mixing bowl with a wire whip attachment, combine

2 cups Sugar
1/2 cup Shortening

Whip for 2 to 3 minutes until light and creamy, scraping bowl constantly. Add

2 cups Flour
3/4 cup Water
3/4 cup Buttermilk
1 tsp. Baking soda
1 tsp. Salt
1/2 tsp.Vanilla Extract
1/2 tsp. Baking powder
2 Eggs
4 oz Unsweetened chocolate,melted and cooled slightly

Beat on high speed for 3 minutes, scraping bowl constantly. Pour into pans.

Spoon 1 Tablespoon Cinnamon Schmeer into each bundt pan. Fill remainder of pan with chocolate batter.

Bake for 25 to 30 minutes, or until wooden pick comes out clean. Cool 10 min., then remove from pans.

Serve with vanilla ice cream and praline twist.

Chef's Tip- If you really want to make this dessert authentic, make miniature bees by rolling marzipan (almond paste) into
ovals, stripe with chocolate and use almond slices as wings. Use to garnish each cake.
