SWEET AND SOUR CHICKEN BALLS

2 c. boneless cubed chicken
2 eggs, slightly beaten
1/4 c. flour
1 tsp. salt
1/2 c. oil
1 c. water
2 chicken bouillon cubes
1/2 c. white sugar
3 Tbsp. soy sauce
1/3 c. vinegar or lemon juice
3 Tbsp. cornstarch mixed with
a little water
1 (9 oz.) can pineapple chunks
(reserve syrup)

Combine eggs, flour and salt. Dip chicken pieces in egg
mixture and brown in oil in large baking skillet. As meat
browns, transfer to shallow baking pan. To skillet, add
chicken broth, sugar, soy sauce, vinegar, syrup drained from
pineapple and cornstarch mixture. Cook until thickened,
stirring constantly. Pour over chicken. Bake in moderate oven
at 350 degrees for 40 minutes. Arrange pineapple over top. Return to oven for 5 minutes. Serve over rice.

Here is another method;

To make chicken balls;

(-Have a pot of boiling water ready,
-Also have your fav. sweet and sour sauce warm. Beside the boiling water.)

chicken meat - minced (no bone no skin)
sherry- to taste
egg
ginger - minced
green onions - minced
sugar - very little
oyster sauce
cornstarch - to assist in binding
Salt / white pepper

1. Combine all ing. in a bowl and mix thoroughly.
2. Grab a hand full of the mix and squeeze (make a fist) till there is a small ball (about the size of a walnut) by the top of your fist by the thumb.
3. Using a spoon, scoop the ball and drop into the boiling water. Repeat this process till you have enough for the day or enough for a dish. Cook until the ball starts to float. Aprox 10- 15 mins.
3. Take out and place into your sweet and sour sauce.


Note. step 3 . you can also deep fry if you prefer a darker colour.
