| I don't know if this is the type of onion crust you are looking for, but this is what I do: Thinly slice a few onions. Dredge them in flour seasoned with salt, pepper and cayenne. Deep-fry them until crispy and golden (fry at about 325 degrees) Allow them to cool and grind them up in a food processor. I then usually add some bread crumbs or Panko flakes (Japanese bread crumbs) to strech the onion crust. At this point follow standard breading of flour, egg, and then the onion crust. Saute in a med. hot pan so you don't burn the crust. I usually only crust one side with the onion crust. Hope this helps out. |
