No Smile Rice Pudding

Does anyone have a recipe for rice pudding? I remember my mom making this when I was still very young; she doesn't make this any more. I asked her last week how to make this, but since it has been so long since she stopped making the rice pudding, she doesn't remember how to do it. Can anyone help me here with recipes and/or ideas? These will be greatly appriciated!

RICE PUDDING

Simmer together, covered, until liquid is absorbed, about 15 mins, stirring occasionally:
2/3 cup white long-grained rice
1 cup water
1/3 cup milk

Mix together:
2 beaten eggs
1/2 cup sugar
2 cups milk
1 tsp vanilla
1/4 tsp salt
2 tbsp grated orange peel
1/2 cup golden raisins, plumped in boiling water for 5 mins and well-drained

Stir rice mixture into egg mixture. Pour into buttered casserole or souffle dish and sprinkle with a little nutmeg. Bake at 300 in a water bath, uncovered, until knife inserted in center comes out clean, about 1 hour.

rice pudding, my favourite comfort food. Very simple. about 1/2 cup calrose rice in a baking dish with a little sugar and 1 litre of milk.Grate nutmeg on the top and pop in med oven and leave till the milk has been obsorbed. add more for your personal consistance. Top should form a brown skin and this the most sort after part of the dish.

There is an article in the current "Fine Cooking" magazine (March) all about rice pudding. You should be able to find a copy to look at in your local library.
