Exclamation Simple desserts.

I am trying to come up with some quick and easy dessert ideas for New Years. Anyone have some ideas?

When I was a pastry chef I used to make something I called a chunky chocolate tart. Pate sucree crust blind baked (though if you're really pressed for time you could use a prebaked graham cracker crust). When the crust has cooled, scatter a few ounces of chopped white and milk chocolate, dried fruit (I like cranberries)and some toasted nuts on the bottom, reserving some of everything for garnish. Chop 11-11.5 oz of semisweet chocolate into small chunks. Heat 1 cup of cream to just below the boil, add to semisweet chocolate, stir til totally melted, (sometimes I'll add a bit of blackberry brandy)pour into tart shell, place reserved choc, fruit and nut pieces on top, refrigerate a few hours til set. Wonderful with creme fraiche ice cream and raspberry sauce.

On the same track,

Phyllo dough tulips filled with chunks of chopped bitter sweet and milk chocolates and bananas or raspberries (or both). bake a la minute and serve with ice cream or whipped cream and fudge sauce.

serve vanilla ice cream with warmed sour brandied cherries in vanilla bean caramel sauce in a tuile shell or chocolate cup.

puff pastry layers with pastry cream, berries and bananas. paint plate with anglaise and raspberry coulis.

caramel coat some macadamia nuts, cut some sweet crust into circles, pipe chocolate mousse between three cookies, set drizzle with ganach and serve with nuts and sauce.

rich cream biscuts filled with marinated fruits and whipped cream.

choux paste profiterals filled with coconut ice cream and served with espresso fudge and coconut crisps.

yum 2 k.
