This is a universal formula that can be multiplied and flavored once you get used to it.


Creme Brulee

1 quart heavy cream
10 yolks
1 whole egg
1 cup sugar
1 vanilla bean
1 cinnamon stick
1 lemon zest

boil cream, sugar and flavors, temper into yolks and eggs, strain 2X.
Bake in water bath ( custard cups of choice in 2 inch hotel pan ) 350 F cover with sheet pan to steam and set custard.

Topping:
bake off
1# dark brown sugar to remove liquid
( you may substitute granulated brown sugar)
When cool, pulverize in processer with 2# granulated sugar. This will give you the beautiful caramel top.

When baked and cooled, place some of the sugar on the top of the brulee and remove all but what sticks. Either broil to a chrisp shell or torch it.

the recipe I use is very similar, minus the cinnamon...
8 Yolks]
1 quart heavy cream
1cup sugar
2 vanilla beans.


Boil cream and vanilla beans.

whisk yolks and sugar... Whisk in the cream and vanilla after it boils... pour into custard cups. (mine are about 5 ounce) Place in a bain marie and bake at 400 for about 50 minute.. covered loosely with aluminum foil. Let cool completely before refrigerating.

I use turbinado sugar for the brulee.

1 Package RC Fine Foods Custard Mix
2 Quarts Heavy Cream
2 Madagascar Vanilla Beans
( 8 Oz. Kahlua) for a Nuevo Latino Flair

Bring Cream to a Boil with Scraped Beans, Add Kahlua,Add RC Mix and Strain into 9
10 OZ Shired Egg Dishes. Refrigerate until Chilled. Sprinkle with 2 Tbsp Sugar and Caramalize with a Blow Torch.
THIS IS THE SIMPLEST AND BEST CREME BRULEE YOUR EVER TASTE.
