With basmati rice, onion, cranberries, pistachios and saffron....

I dehydrated fresh cranberries my self, they turned out great. I should have not used the food processor on the pistachios, it worked a little too well , I'll have to hand crush some more and put it in the leftovers for more crunch.

We made homemade chicken stock. Unfortunately we added 4 C of broth right off the bat , should have used 3.5 C in instead for a little dryer consistency and to help get the "crust".

All in all, VERY GOOD! Thoroughly enjoyed the dish. Very pleasant. Good flavor. Everything compliments eachother.

Cchiu - I'm so glad you enjoyed it! You don't really need to do more than coarsely chop the pistachios, I should've been clearer on that.

When my friend gave me the recipe, she used an item that she referred to as "barberries," which her mom had sent her from Iran. The cranberries were a substitute. I've now found a source for the barberries - www.parsianmarket.com/index.shtml (that is correct, "parsian," not "parisian"). They have a whole bunch of middle-eastern goodies including the dried lemons mentioned on another board. I'm excited about being able to use the right ingredient now. What did you serve with it?

Wisdom, huh? Keep away from the date guy - that pouffy hair makes me think he might be a little shifty! No, really and truly, I'm so grateful for all the good advice I get from everybody here, I'm really happy that I can reciprocate a little from time to time.

I'll see what I can do! Hmm . . . 250 +/- cookbooks plus the stuff I don't use recipes for . . . I have to think of a goody.
