Post Emeril's Fried Rice

Here's one of my favorite recipes from Emeril Lagasse; I like it so much that I thought it would be good to share it. If you would like to visit the site where I get all of Emeril's recipes (since I am a member of that site), you can go to: www.emerils.com

The recipe is as follows:
2 tablespoons vegtable oil
2 cups assorted cooked vegtables (such as any vegtable leftovers)
2 eggs, beaten
2 tablespoons soy sauce
1 teaspoon sesame oil
2 cups cooked rice
salt and pepper
1/2 cup coarsley chopped nuts (such as cashews or peanuts)
2 tablespoons chopped green onion

In a large skillet or wok heat oil over medium-high heat. Add vegtables and cook until just about tender. Push vegtables to sides of pan and pour eggs in the middle. Scramble eggs, and when they begin to solidify, add soy sauce, sesame oil, and rice. Toss to combine ingredients and heat through rice. Taste and adjust seasoning with salt and pepper, if needed. Serve immediately, garnished with nuts and green onions. Yields 3 to 4 servings.

I really like this recipe. Hope you enjoy it as much as I do!

Thanks for sharing Afra. Rice is one of my favourite foods, so I shall be trying this one...quick smart.

Afra: Thanks for the recipe! I am planning to try out my new wok tonight, and the recipe I was going to use does not look nearly as good as this! Can't wait to try it.
